With watermelon being a SUPER CHEAP 88c per kilo right now I’ve been buying them whole every few days or so (we go through a whole one every few days around here) giving Little E some seriously cute melon belly. Obviously with so much watermelon available, I’ve had to get a little creative to make sure we eat it all before it gets gross from the fridge.
After doing some searching online, I came across several posts for watermelon salad. OF COURSE! How did I not think of this on my own?!?! The days and nights have been hot, humid and sticky as of late and watermelon salad turned out to be a perfect dinner option. Hydrating and filling all at the same time, not to mention super delicious! I made it twice, serving it as a main and a second time as a side to Gluten Free Falafel Burgers.
The mint added a super yummy freshness while the feta added the savoury. So good!
- 1/4 watermelon
- 100g feta or goats cheese
- 1 cup fresh mint leaves
- splash of balsamic vinegar (optional)
- Cut watermelon into small cubes
- Toss with mint leaves and cheese
- Add a small splash of balsamic vinegar
- serve with gluten free falafel burgers or by itself!
