Tart cherries. Bitter chocolate. Sweet coconut. It’s all here.
My mind was sufficiently blown when I joined a vegan eating group on facebook and I was informed that frozen bananas, when whipped, turn into soft serve icecream. Don’t believe me? Go, freeze some bananas, whip them in a food processor and see. Don’t worry I’ll wait right here….
Done? What did I tell you? Amazing right? It’s delicious on its own but add some vanilla essence to make it ‘neutral-ish’ and it becomes the perfect soft serve base for practically ANY icecream flavour. And completely vegan, sugar free, fat free, gluten free – ALL THE FREE!
I’ve never liked cherry ripe chocolate bars. They just don’t do it for me. Too sweet. Just not nice. Cherries are yummy though. So is coconut and chocolate. But the idea of putting all of those flavours together just didn’t appeal to my taste buds. But I’ve got to tell you, this ice cream is a winner. I’m a convert. Not the chocolate bar convert though. They’re still gross. It’s fresh and deliciously sweet (but not too sweet). Best of all, it’s super easy to make!
Add more of anything you want.
For more texture add coconut and cherries last and blend for only a few seconds.
Serve with some sprinkling of coconut, grated chocolate et voila! Yum. Yum. Yum. Healthy. Yum.
Obviously the bowl was empty in no time….and refilled….and empty again….
I’m not going to lie….I ate the entire thing in one go. I shared a small bowl with D but other than that, I downed this like it was going out of fashion!
