There’s nothing more student than living off of packet noodles. I didn’t have to do it as intensely as some of my friends, but I still had the occasional mi goreng life-buffet. But you’ve got to wonder how healthy a bowl of noodles really is. There’s really not much going on nutritionally but the convenience is undeniable.
I got turned off of noodles because of the non-existent nutritional value and the fact that I needed two or three packets just to feel full but my mum (the queen of ‘make-do-with-what-you’ve-got’), showed me the light when it comes to packet noodles.
Fresh herbs and greens from the garden, freshly picked red chili and a good old packet of noodles turned this convenience staple into a quick, easy bowl of delicious healthiness. She made it in a pot over a stove, but I simplified it even more and made it into a one-bowl wonder. (Seriously easy!) I make this recipe for myself and anyone else who will have it ALL THE TIME! Just chop up your stuff (I used bok choy, choy sum and gai lan), cook them with your instant noodles and garnish with fresh herbs and chilli.
